Sweet Potato Pancakes

Note: gluten-free, easy and quick. Perfect breakfast, dessert or snack.

Ingredients:

(2 servings = 8 little pancakes)

  • 150g mashed sweet potato (cooked and mashed)
  • 1 egg (beaten)
  • 2 egg whites (beaten)
  • cinnamon (I used 1 teaspoon)

Method:

  1. Mix all ingredients thoroughly together
  2. Heat up a pan over medium heat
  3. Make 8 little pancakes
  4. Bake each side for about 2 minutes
