Sweet Tuna Sub

Now I imagine one or another time in our lives we all enjoyed eating one of those huge sub sandwhiches. Well, this meal is based on the same principle but the difference is that instead of using a bread roll to add the topping too, we will be using a large baked sweet potato.

Ingredients:

  • 1 can shredded tuna in water
  • 1 large baked sweet potato
  • 1 tablespoon lite mayo
  • 2 tablespoons mashed avo
  • 1-2 tablespoons crushed almonds

Method:

Mix the tuna, 1 tablespoon lite mayo, 2 tablespoons mashed avo and 1-2 tablespoons crushed almonds together in a bowl. Slice open the baked sweet potato down the middle and then add your “mix” into the sweet potato. Protein, and plenty of healthy fats in this meal plus all the goodness and fibre from the sweet potato.
