Ingredients:
- 1kg of sweet potatoes, cut into 2-3cm cubes
- 2 celery stalks, diced
- 1 red onion, diced
- 10 garlic cloves, peeled (optional)
- 1 red chilli or jalapeño pepper, minced
- 1/3 cup diced bell pepper
- 1/2 cup of your favourite herbs (coriander, parsley, dill, chives), chopped
- 5 tablespoons white or balsamic vinegar
- 1 tablespoon olive oil
- 2 teaspoons prepared mustard
Method:
- Arrange potatoes evenly in a large baking dish with garlic cloves.
- Bake at 400 degrees for 25 minutes or just until tender.
- Stir remaining ingredients together in a large bowl until blended.
- Add sweet potatoes, and toss gently to coat. Serve warm or chilled.
