High Protein Chocolate Chip Cookies

Ingredients:

  • 1 cup vanilla whey protein powder
  • 1 tsp Baking soda
  • 1/4 tsp Salt
  • 1/2 cup Unsalted butter…real butter…not that margarine processed crap, at room temperature
  • 3/4 cup Natural creamy peanut butter
  • 1/2 cup Stevia
  • 1/2 tsp Pure vanilla extract
  • 1 Large egg
  • 1/2 cup Rolled oats
  • 3/4 cup Semi-sweet or dark chocolate chips

Method:

  1. Preheat oven to 350 degrees F.
  2. Line two baking sheets with parchment paper and set aside.
  3. Whisk together the vanilla whey protein powder, baking soda and salt, set aside.
  4. On medium speed, cream together the butter, natural peanut butter, Stevia and vanilla extract,
  5. for about 3 minutes. Add the egg and beat to combine. On low speed, add the protein powder
  6. mixture in 2 additions until just combined after each addition.
  7. Stir in the oats, and then the chocolate chips.
  8. Use a tablespoon to measure each cookie and drop dough onto prepared baking sheets about 2 inches apart.
  9. Bake for 10 minutes, or until the cookies are lightly golden around the edges. Cool completely on the baking sheet and then enjoy!
