High Protein Bran Apple Muffins

Ingredients:

  • ¾ cup Digestive Bran
  • 1 Grated Apple (I used a Golden Delicious)
  • 6 Egg Whites
  • Stevia/Sweetener to taste
  • 1tsp Cinnamon
  • 1tsp Baking Powder

Method:

  1. Preheat oven to 180 (°C)
  2. Mix Digestive Bran, Grated Apple, Egg Whites, Stevia/Sweetener & Cinnamon together.
  3. Add the teaspoon of Baking Powder to the above mixture last, mix thoroughly as this makes the muffin mixture nice and fluffy.
  4. Lightly grease a muffin tin with Spray & Cook and divide the mixture evenly among the 6 muffin cups.
  5. Bake in preheated oven for 15min (depending on oven)
  6. ENJOY!!

Variations:

• Add mashed Banana in place of the Apple.
• Add some Nuts or Seeds for those extra healthy fats
