Egg White Fish Cakes

This is a recipe put together by Theo “Big Show” De Wet. He travels quite a lot so he knows how difficult it is to consume enough quality foods on the road. He came up with this idea for high protein snacks which can be eaten while driving long distances without the fear of messing on your clothes. The amounts of the ingredients may vary as per your individual needs.

Ingredients:

  • 1kg hake fillets
  • 20 egg whites
  • 1 chopped onion
  • 1/2 cup chopped mushrooms
  • 1/2 a block of feta

Method:

Bake or grill hake fillets and then put through food processor until very fine. Mix egg whites, hake and all other ingredients into mixing bowl and mix well. Place servings into muffin pan and place in pre-heated oven at 180 degrees. Check after every 10 minutes until fully baked.

Can be kept in the fridge for a number of days.
