Chicken muffins and meatloaf by Mardi Delport

Ingredients

1 kg ground chicken/chicken mince
4 egg whites
1 ½ to 2 cups of plain oats
½ tsp ground cumin
½ tsp dried thyme
2 tsp dry yellow mustard
1 tsp black pepper
1 tsp cayenne pepper
1 tsp salt
2 tbsp garlic powder (2 cloves minced)
1 onion (finely chopped)
4 celery stalks (finely chopped)


Directions

1) Preheat oven to 180 ºC.
2) Spray muffin pan with Spray and Cook.
3) Mix all the ingredients together in one large bowl.
4) Roll the mixture into balls and place in muffin or bread pan.
5) Bake for 40 minutes.
