Banana and Egg Pancakes

Ingredients:

  • 2 eggs
  • 1 banana (ripe) – if banana isn’t ripe, you can put it in microwave for 10 seconds
  • Cooking spray, for pan

Instructions:

Mash ripe banana well, add in whisk eggs.
Warm non-stick or cast iron pan to medium, spray with oil. Add soup spoon size mix to the pan and cook pancakes 30 seconds on each side and serve.
